Stracciatella Gelato
Milk-forward vanilla gelato threaded with delicate, crisp shards of dark chocolate.

Vanilla gelato base

The small print names the exact — often Dutch — products this recipe was calculated with. Equivalents work, but if a label differs materially, the formula deserves a recalculation.
Prepare
Disperse the guar
In a completely dry bowl, thoroughly combine the skim milk powder, sugar, dextrose, guar gum, and salt. Break up every visible lump and make sure the guar is evenly diluted through the other powders before it touches liquid.
Blend the base
Combine the whole milk, cream, and vanilla in a tall blending jug. Start an immersion blender, gradually sprinkle the dry mixture into the moving liquid, and blend for 30-45 seconds until completely smooth. Keep the blade submerged and avoid whipping in foam.
Age the base
Cover and refrigerate for 4-12 hours so the milk powder and guar can fully hydrate. Stir gently before filling if any separation is visible.
Fill and freeze
Pour the approximately 424 g base into the NC300EU pint. Confirm it is below the molded MAX FILL line and that enough headroom remains for the 40 g chocolate finish. Fit the storage lid and freeze on a level surface for at least 24 hours.
Melt the chocolate
After the gelato has been processed successfully, gently melt the dark chocolate over barely simmering water or in short microwave bursts. Stir until smooth, then let it cool to approximately 32-35°C: fluid but not hot. Plain chocolate sets into crisp, slightly thicker shards than an oil-thinned finish. Keep all water away from the chocolate.
Create the stracciatella shards
Transfer about one-third of the processed gelato to a chilled bowl. Drizzle a very thin stream of melted chocolate over the gelato left in the pint; wait 5-10 seconds for it to set, then break and fold the ribbons through once with a spoon. Return half the reserved gelato and repeat, then add the remainder and repeat once more. Work quickly and fold as little as possible. Serve immediately.
Spin plan
Confirm the frozen surface is level, there is no tall hard hump, the pint remains below MAX FILL, and the base is within -12°C to -25°C.
Run Gelato once.
If creamy, stop and fold in the melted chocolate by hand. If safely powdery or crumbly, scrape the sides inward and RE-SPIN once before adding the chocolate. Do not add liquid automatically. If too soft, do not keep spinning; refreeze until firmer before folding. Do not use Mix-In for the melted chocolate, because it can form a plug or pulverize the delicate shards.
Smooth leftovers flat before refreezing. When hard, rerun Gelato rather than RE-SPIN; another full cycle will pulverize the existing chocolate shards, so the texture will no longer be classic stracciatella.

Development notes
The vanilla base is intentionally milk-forward and only moderately sweet so the dark-chocolate finish remains distinct. Dextrose supplies more freezing-point depression than sucrose at lower relative sweetness, while skim milk powder adds body without making the gelato cream-heavy.
The traditional stracciatella effect comes from freezing a thin stream of melted chocolate on contact with the cold gelato and breaking the resulting ribbons into irregular flakes. Hand-folding is deliberate: solid chocolate chips remain chunky, while the NC300EU Mix-In program can overprocess the fine shards.

- Formula values describe the approximately 424 g frozen vanilla base; the 40 g post-spin chocolate finish is excluded.
- PAC uses dextrose monohydrate FPDF 1.9/POD 0.75, lactose PAC 1.0/POD 0.2, and salt FPDF 5.9.
- The complete finished pint is approximately 11.0% fat and 41% total solids once the chocolate is included.
- The 0.5 g guar provides approximately 0.12% active hydrocolloid in the base. Do not add another stabilizer blend without recalculating the active gum dose.
- Nutrition and composition are estimates based on representative whole milk, 35% cream, skim milk powder, and 70% dark chocolate. Product substitutions require recalculation.
