Rich Mango Ice Cream

Mango-cream base

The small print names the exact — often Dutch — products this recipe was calculated with. Equivalents work, but if a label differs materially, the formula deserves a recalculation.

Prepare

  1. Choose the mango

    Taste the mango before starting. It should be soft, highly aromatic, and delicious on its own. A pale, fibrous, tart, or weakly flavored mango will make equally weak ice cream. If using fruit pieces, purée them completely smooth before continuing.

  2. Disperse the gums

    In a completely dry bowl, thoroughly combine the sugar, dextrose, skim milk powder, guar gum, xanthan gum, and salt. Break up every visible lump and make sure the tiny gum quantities are evenly diluted through the other powders before they touch liquid.

  3. Blend the base

    Combine the mango, cream, and lime juice in a tall blending jug. Start the immersion blender with its blade submerged, then gradually sprinkle in the dry mixture. Blend for 45-60 seconds until completely smooth and uniform without deliberately whipping in air.

  4. Taste and age

    Taste the cold base. It should taste unmistakably of ripe mango, slightly sweeter and brighter than the intended frozen dessert, with no obvious dairy, gum, or lime flavor. Cover and refrigerate for 4-12 hours so the milk powder and gums hydrate. Stir gently before filling if any separation is visible.

  5. Fill and freeze

    Pour the approximately 443 g base into the NC300EU pint. Confirm it remains below the molded MAX FILL line, fit the storage lid, and freeze on a level surface for at least 24 hours.

Before

Confirm the frozen surface is level, there is no tall hard hump, the pint remains below MAX FILL, and the base is within -12°C to -25°C.

First cycle

Run Ice Cream once.

After

If creamy, stop. If safely powdery or crumbly, scrape the sides inward and RE-SPIN once without automatically adding liquid. If too soft, do not keep spinning; refreeze until firmer.

Leftovers

Smooth leftovers flat before refreezing. When hard, rerun Ice Cream rather than RE-SPIN; the refreeze behavior of this formula has not yet been tested.

Development notes

jhermann’s Mango Kulfi (Deluxe) is a dairy-free coconut-and-cardamom recipe for a 680 g Deluxe tub, built with polyols, glycerin, alcohol, specialty stabilizer blends, and optional flavor drops. Its author currently describes it as needing improvement. This recipe therefore takes only the useful high-fruit idea from that source and rebuilds the formula directly for one NC300EU pint as a conventional premium dairy ice cream focused on the taste of ripe mango.

The fruit is intentionally the majority ingredient. Cream supplies richness, skim milk powder adds body with little extra water, and dextrose supplies more freezing-point depression per unit of sweetness than sucrose. Lime is present below the level where it should read as a separate flavor; its job is to restore the brightness that dairy and freezing mute.   • Formula values describe the approximately 443 g base. Mango is approximately 54% of the mix by weight; there is no vanilla, egg, coconut, cardamom, alcohol, or high-intensity sweetener to compete with it.
  • PAC models representative ripe mango sugar as approximately 6.97% sucrose, 4.68% fructose, and 2.01% glucose, using USDA-derived composition values summarized in the cited mango-composition review. It uses FPDF 1.0/1.9/1.9 respectively, dextrose monohydrate FPDF 1.9, lactose FPDF 1.0, and salt FPDF 5.9.
  • POD uses sucrose 1.0, fructose 1.7, glucose and dextrose 0.75, and lactose 0.2. Actual mango composition can move both PAC and sweetness materially.
  • The measurable 0.5 g guar and 0.2 g xanthan provide approximately 0.16% active hydrocolloid in a 2.5:1 ratio. Do not add another stabilizer blend on top without recalculating the active gum dose.
