Mascarpone base

The small print names the exact — often Dutch — products this recipe was calculated with. Equivalents work, but if a label differs materially, the formula deserves a recalculation.

Prepare

  1. Disperse the powders

    In a completely dry bowl, thoroughly combine the skim milk powder, sugar, dextrose, guar gum, and salt. Break up every visible lump and make sure the guar is evenly diluted before it touches liquid.

  2. Blend the milk base

    Combine the whole milk and vanilla in a tall blending jug. With the immersion blender running and the blade submerged, gradually sprinkle in the dry mixture. Blend for 30–45 seconds until completely uniform without deliberately whipping in air.

  3. Add the mascarpone

    Add the mascarpone and blend only until no white flecks or thick streaks remain. Scrape down once if needed. Avoid prolonged blending: mascarpone supplies all the added fat, and excessive shear or warmth can make the base greasy.

  4. Age the base

    Cover and refrigerate for 4–12 hours so the milk powder and guar hydrate and the dairy flavor integrates. Taste the base cold before filling. It should taste like slightly over-sweetened mascarpone cream, with salt and vanilla supporting the cheese rather than appearing as separate flavors.

  5. Fill and freeze

    Stir gently if any separation is visible, pour the approximately 453 g base into the NC300EU pint, confirm it is below the molded MAX FILL line, fit the storage lid, and freeze on a level surface for at least 24 hours.

Before

Confirm the frozen surface is level, there is no tall hard hump, the pint remains below MAX FILL, and the base is within -12°C to -25°C.

First cycle

Run Ice Cream once.

After

If dense and creamy, stop. If safely powdery or crumbly, scrape the sides inward and RE-SPIN once without automatically adding liquid. If it appears greasy or waxy, stop rather than adding more processing heat and record the result for reformulation.

Leftovers

Smooth leftovers flat before refreezing. When hard, rerun Ice Cream rather than RE-SPIN; refreeze behavior has not yet been tested.

Development notes

This recipe is intentionally mascarpone-flavored, not tiramisu, cheesecake, or vanilla ice cream. Coffee, cocoa, condensed milk, yogurt, lemon, eggs, alcohol, and mix-ins are excluded so the main flavor remains sweet cultured cream. The tiny vanilla dose rounds the dairy aroma without being large enough to define the flavor.

The calculation uses AH Mascarpone 80+ as its benchmark: 38% fat, 4% carbohydrate, 3% protein, and 370 kcal per 100 g. The 125 g dose is half a tub and contributes enough mascarpone to make the flavor more exposed than in the site’s Tiramisu Ice Cream, where 110 g mascarpone shares attention with condensed milk, espresso, cocoa, and ladyfingers.

AH whole milk forms the neutral liquid backbone. Skim milk powder raises dairy solids and protein without adding more fat; sucrose provides clean sweetness; and dextrose supplies additional freezing-point depression at lower relative sweetness. No glycerin or high-intensity sweetener is needed for the calculated first test.

The main risk is not iciness but fat character. Mascarpone can seem pleasantly dense and coating at the right dose, then waxy or greasy when the fat is too high, the product is richer than expected, or the base receives too much shear and processing heat. The first pint should therefore be judged on mascarpone recognition, clean melt, and aftertaste before increasing the cheese.

  • Formula values describe the approximately 453.4 g base. No mix-ins or post-spin finishes are included.
  • PAC uses sucrose FPDF 1.0/POD 1.0, dextrose-monohydrate FPDF 1.9/POD 0.75, lactose FPDF 1.0/POD 0.2, and salt FPDF 5.9. The negligible vanilla-sugar contribution is provisionally modeled as sucrose.
  • The estimated PAC includes approximately 28.6 g dairy lactose and all product-label-equivalent salt. Different mascarpone, milk-powder, and dextrose labels will move PAC, POD, total solids, fat, and nutrition.
  • The 125 g mascarpone supplies approximately 47.5 g fat. Together with whole milk, the mix lands near 12.5% fat: a premium region intended to express mascarpone without requiring added cream or egg.
  • The approximately 36.8% total-solids estimate includes current AH mascarpone and whole-milk values plus representative skim-milk-powder, dextrose-monohydrate, guar, and vanilla composition.
  • The 0.5 g guar is approximately 0.11% active hydrocolloid. The dose is deliberately restrained because mascarpone fat, dairy protein, and skim milk powder already provide body.
  • Mascarpone contains a substantial amount of solid milk fat, so the base may behave harder or waxier than PAC alone predicts. The first test should evaluate coating and melt as carefully as first-spin softness.
