Brown Butter Kruidnoten Ice Cream
Warmly spiced brown-butter ice cream with kruidnoten blended into the base and crunchy pieces folded through after spinning.

Brown-butter kruidnoten base
Crunchy mix-in
The small print names the exact — often Dutch — products this recipe was calculated with. Equivalents work, but if a label differs materially, the formula deserves a recalculation.
Prepare
Brown and weigh the butter
Melt about 25 g unsalted butter in a small light-colored saucepan over medium-low heat. Cook, swirling frequently, until the milk solids are deep golden brown and smell nutty, then immediately remove from the heat. Scrape the butter and every browned milk-solid fleck into a small heatproof cup. Weigh exactly 15 g of this finished brown butter for the base; make a little more if the yield is short.
Prepare the dry mixture
Pulverize 18 g kruidnoten into a flour-fine crumb. In a completely dry bowl, thoroughly combine that crumb with the skim milk powder, dark brown sugar, white sugar, dextrose, speculaas spice, guar gum, and salt. Break up every sugar lump and make sure the guar is evenly diluted before it touches liquid.
Build the warm emulsion
Combine the whole milk and cream in a saucepan and warm to approximately 55-60°C; do not boil. Add the weighed brown butter and vanilla, then use an immersion blender with the blade submerged until the butter is fully dispersed. With the blender running, gradually sprinkle in the dry mixture. Blend for 45-60 seconds until completely smooth without deliberately whipping in air.
Chill and age
Cool the base promptly, cover, and refrigerate for 4-12 hours so the kruidnoten crumb softens completely, the dairy solids and guar hydrate, and the spice integrates. Taste it cold: it should be slightly sweeter and more aromatic than the intended frozen result, with clear kruidnoten flavor and no raw powdered-spice harshness.
Fill and freeze
Stir gently if any separation is visible, then pour the approximately 432 g base into the NC300EU pint. The expected base volume is roughly 410-420 ml, leaving room for the mix-in, but the molded MAX FILL line is authoritative. Fit the storage lid and freeze on a level surface for at least 24 hours.
Prepare the crunchy pieces
Immediately before processing, break 30 g kruidnoten into irregular 5-8 mm pieces. Do not grind them to dust. Keep them dry at room temperature until the base is creamy.
Add the kruidnoten
After a successful main spin, make a central hole approximately 4 cm wide down to the bottom. Add the broken kruidnoten and run Mix-In once. If the actual pint does not have enough headroom, stop at 20-25 g and scatter the remainder over the servings.
Spin plan
Confirm the frozen surface is level, there is no tall hard hump, the pint remains below MAX FILL, and the base is within -12°C to -25°C.
Run Ice Cream once.
If creamy, add the broken kruidnoten and run Mix-In once. If safely powdery or crumbly but cohesive, scrape the sides inward and proceed directly to Mix-In. If it remains loose dry powder, RE-SPIN once without automatically adding liquid, then fold the kruidnoten through by hand rather than running a third machine cycle. If too soft, do not keep spinning.
Smooth leftovers flat before refreezing. When hard, rerun Ice Cream rather than RE-SPIN; another full cycle will pulverize the existing kruidnoten, and refreezing will soften their crunch.

Development notes
- Machine and container: Ninja CREAMi NC300EU, one standard 473 ml pint.
- Target: dense premium dairy ice cream that tastes unmistakably of kruidnoten, with toasted brown-butter depth, a dark-caramel edge, and distinct crunchy cookie pieces.
- Serving intent: immediate post-spin serving. Refreeze behavior and next-day cookie texture are untested.
- Freezer assumption: approximately -18°C, with the actual frozen base verified inside the NC300EU’s -12°C to -25°C processable range.
The base uses two kruidnoten treatments for different jobs. The finely ground 18 g dose softens and disperses through the dairy, making the ice cream itself taste of the biscuit. The 30 g Mix-In dose preserves contrast and crunch. Adding more crumb to the frozen base before the first test would raise starch and total solids while making the spice level harder to diagnose.
The calculation benchmark is AH Kruidnoten: 427 kcal, 11 g fat, 75 g carbohydrate, 31 g sugar, 6.3 g protein, 1.5 g fiber, and 1.45 g salt per 100 g. The current product page marks that seasonal product out of assortment, so use an available plain kruidnoot with a broadly similar label and record the brand. Chocolate-coated, filled, or unusually fatty kruidnoten are not direct substitutes.
AH whole milk, AH 35% cream, and AH unsalted butter provide the dairy benchmark. Brown butter is used in a measured finished dose because its toasted milk solids echo the baked biscuit; dark brown soft sugar supplies molasses-like caramel depth; dextrose raises freezing-point depression without making the result cloying. The extra 1.2 g speculaas blend compensates for aroma suppression from dairy, fat, and freezing, but it is the first flavor variable to adjust after tasting because commercial blends differ sharply in clove and pepper strength.
No caramel swirl is included in the first batch. A frozen swirl would need its own PAC balance and would add a second texture variable before the base and spice intensity are proven.

- Formula values describe the approximately 432.2 g frozen base. The 30 g post-spin kruidnoten are included in nutrition but excluded from PAC, POD, and composition percentages.
- The expected base volume is approximately 410-420 ml. Actual density and kruidnoten displacement vary, so the molded NC300EU MAX FILL line remains authoritative and mix-in quantity must be reduced if needed.
- PAC uses sucrose FPDF 1.0/POD 1.0, dextrose-monohydrate FPDF 1.9/POD 0.75, lactose FPDF 1.0/POD 0.2, estimated mixed kruidnoten sugars, and salt FPDF 5.9. Excluding all label-equivalent salt, modeled PAC is approximately 26.4.
- Estimated MSNF is approximately 9.9%. Skim milk powder provides body and supports the brown-butter emulsion without pushing the base beyond the useful dairy-solids region.
- The approximately 40.5% total-solids estimate includes the starch, sugar, fat, and protein in the 18 g kruidnoten blended into the base. Those crumbs are functional flavor solids, not merely a garnish.
- The 0.4 g guar is approximately 0.09% active hydrocolloid. The dose is deliberately low because cookie starch, dairy protein, milk powder, and the high total-solids load already provide body.
- Finished brown butter is more concentrated than raw butter because cooking removes water. The calculation models the weighed 15 g finished dose at approximately 99% fat; using 15 g raw butter would materially change both flavor and composition.
- Nutrition is estimated from current AH whole-milk, AH 35% cream, AH unsalted-butter, and AH Kruidnoten labels plus representative skim-milk-powder, dextrose-monohydrate, dark-brown-sugar, vanilla, and spice composition. Product substitutions require recalculation.
