Light Blueberry Buttermilk Ice Cream
Bright blueberry ice cream with a fresh buttermilk tang, gentle lemon lift, and a creamy finish from a small amount of cream.

Blueberry-buttermilk base
The small print names the exact — often Dutch — products this recipe was calculated with. Equivalents work, but if a label differs materially, the formula deserves a recalculation.
Prepare
Thaw the blueberries
Thaw the blueberries in the refrigerator until soft enough to blend. Keep all of their released juice; do not put loose frozen berries into the Creami tub.
Disperse the gums
In a completely dry bowl, thoroughly combine the skim milk powder, sugar, dextrose, guar gum, xanthan gum, and salt. Break up every visible lump and make sure the tiny gum quantities are evenly diluted through the other powders before they touch liquid.
Blend the fruit and dairy
Combine the buttermilk, thawed blueberries and their juice, light dairy spread, cream, lemon juice, and lemon zest in a tall blending jug. Use an immersion blender until the berries and dairy spread are completely smooth, keeping the blade submerged so the mixture does not become foamy.
Add the dry mixture
With the immersion blender running, gradually sprinkle the dry mixture into the moving liquid. Blend for another 30-45 seconds until completely uniform without deliberately whipping in air.
Age the base
Cover and refrigerate for 4-12 hours so the skim milk powder and gums hydrate and the blueberry, lemon, and cultured-dairy flavors integrate. Stir gently before filling if any separation is visible.
Fill and freeze
Pour the approximately 464 g base into the NC300EU pint, confirm it is below the molded MAX FILL line, fit the storage lid, and freeze on a level surface for at least 24 hours.
Spin plan
Confirm the frozen surface is level, there is no tall hard hump, the pint remains below MAX FILL, and the base is within -12°C to -25°C.
Run Lite Ice Cream once.
If creamy, stop. If safely powdery or crumbly, scrape the sides inward and RE-SPIN once. Do not add liquid automatically. If too soft, do not keep spinning; refreeze until firmer.
Smooth leftovers flat before refreezing. When hard, rerun Lite Ice Cream rather than RE-SPIN; the refreeze behavior of this formula has not yet been tested.

Development notes
Inspired by jhermann’s Blueberry Buttermilk (Deluxe), but rebuilt directly for one NC300EU pint rather than geometrically scaled. This conventional-sugar version replaces the source recipe’s SweEX polyol blend, glycerin, alcohol, protein powder, inulin, GMS, CMC, and stabilizer premix with sucrose, dextrose, skim milk powder, a small amount of cream, and a restrained guar-xanthan blend.
The product assumptions use AH Karnemelk, AH Biologisch wilde blauwe bessen, and AH Zuivelspread light. Always recalculate when a replacement label differs materially.
The small cream dose is deliberate. Removing it would save only about 53 kcal from the whole pint while also removing most of the formula’s fat lubrication and flavor release. At approximately 1.6% fat, the finished base remains firmly low-fat.

- Formula values describe the approximately 464 g frozen base.
- PAC uses dextrose monohydrate FPDF 1.9/POD 0.75, lactose PAC 1.0/POD 0.2, blueberry glucose and fructose FPDF 1.9, and salt FPDF 5.9.
- The measurable 0.5 g guar and 0.2 g xanthan provide approximately 0.15% active hydrocolloid in a 2.5:1 ratio. The dose is intentionally restrained because blueberry pectin, dairy protein, and skim milk powder also contribute body.
